119. Arugula and Egg Salad

119. Wild arugula, egg salad (not mine), cucumber, yellow bell pepper, olive, oil and vinegar. I think egg salad, and potato salad, are suffer from individual taste a lot. That is, what one person likes, another doesn’t. I find most tuna salads are OK, but I guess I’m more particular about egg salad.

117. Arugula, Apple, and Cucumber

117. Baby arugula, Fuji apple, cucumber, walnuts, mint, cheddar cheese, olive oil, 12 year balsamic vinegar. This was very crisp and crunchy. I’ve often wanted to mix apple and cucumber, but while it seemed like a good idea on one hand, it seemed odd on the other. But it works very well. The cheddar and walnuts were very important to get the right contrasts.

115. Arugula and Pear

115. Baby arugula, red bartlett pear, red butter lettuce, sheep’s milk feta, pine nuts, olive oil, pear champagne vinegar, cardomom, salt, and pepper.

Okay, it wasn’t wild arugula, and adding the red butter lettuce did nothing for me. So I prefer the wild arugula, pear, and no cardomom.
